My favorite coffee shop that I discovered right was we were heading home from Henderson, was Dark Moon Coffee Roasters. This coffee shop was so fun to walk into, as it it has a cool industrial vibe, and you can see the gorgeous coffee roaster in the back. They have many different single origin and blend whole bean coffees for sale, and their drink menu is also wonderful. I had a great iced latte for our roadtrip home. And recently, Dark Moon made Food and Wine's Best Coffee Shops in every state list, which is also super cool!

Mothership Coffee Roasters was the first spot we stopped at for coffee, and oh my goodness, this coffee shop will have you ooohing and ahhhhing as soon as you walk in. I went to the one on St. Rose Parkway, but there are a few around Vegas that you can also check out. The super sleek, clean bohemian vibe was a welcome sight for sore eyes at 6am when the coffee shop opened. My latte was delicious, and the display case of pastries also looked very tempting. I went back every morning around opening time for the quick 3 days I spent in Henderson.

3. The Coffee Class

Another great coffee and breakfast spot in Henderson is The Coffee Class. I have found it super interesting that Henderson coffee shops tend to open earlier than Las Vegas ones, so if you are an early bird, your best bet for great coffee is in Henderson. The Coffee Class opens at 6:30 am, and they have a great breakfast and pastry menu, in addition to their coffee menu (the recently announced they carry Onyx coffee out of Arkansas; one of the best coffee shop in the whole country). The Coffee Class seems to be best known for their vegan and gluten= free pastries, that you really can't tell are vegan or gluten-free, and that really does say a lot about the quality of these baked goods. My favorite pastries are the poptarts. A mainstay is the wild Maine blueberry poptart, and then there are a couple seasonally rotating flavors. Pictured are the bluberry poptart and the raspberry cookie butter filled circus animal poptart. Both are super good! A new savory breakfast, perfect for enjoying pre-trail time, is the baked quiche egg with creamed spinach and avocado on a ciabatta bun. It was served with a small amount of fruit.
